Cocktail recipes tend to bring out my worst kitchen vibes — they make me feel similar to the way I feel when encountering a complicated recipe with obscure ingredients (note: intimidated, annoyed, frustrated). Bitters? Egg whites? Liquid smoke? Pretty sure that’s a fire hazard and I’m not interested in confirming.
But when I found out there was a vodka brand that aligned so perfectly with my attempts to avoid processed sugars and gluten, I decided I would take the cocktail-recipe plunge. Devotion Vodka is certified sugar-free, gluten-free, organic, and Kosher — ie. you can avoid some of the guilt while drinking.
With winter hanging on for dear life and my new Vitamin D deficiency (kidding, but really at this point, it probably exists), I decided to make a cocktail that would at least taste like the beach. It’s a cocktail recipe for people who are easily scared away by ingredient lists. I promise, nothing scary happening here!
The recipe makes enough for two glasses of the cocktail, so multiply for more!
Ingredients:
1/2 cup of Devotion Pure vodka
1 1/2 cup of coconut water (I used ZICO)
1 cup of pineapple pieces (I used frozen, partially defrosted)
3 limes; enough for about 1/3 cup of juice and garnish
Ice cubes
Directions:
Combine lime juice and pineapple in a blender or food processor and blend.
Place ice cubes in two large cocktail glasses, then pour in the pineapple lime mix, evenly dividing between the two.
Add 3/4 cup of coconut water to each glass, then top with 1/4 cup of vodka in each glass. Use a spoon to stir.
Serve cold and garnish with limes and a bit of extra lime juice or zest. Close your eyes and ignore the blaring radiator – you’re on a beach and life is good.
